Continuing our tradition of bringing great speakers to Market Lane, we're very excited that Sam Sgambellone from Mecca Espresso is hosting two workshops on the 6th of August.
The title of the workshop is 'Understanding the Principles of Extraction with Refractometry' and, while the subject matter might sound a little dry for all you out there who are only interesting in drinking coffee, it's certainly interesting to anyone involved in quality control.
Refractometry has been used as a process control mechanism since the 1940s. Traditionally it has only been used for products such as juices and wine (to measure the Brix or sugar content), and so it's a very new technology for the coffee industry. Using a refractometer, we can measure the amount of dissolved coffee in a brewed cup of coffee. This measurement tells us the strength of the cup of coffee alone, and couple with a measurement of the dose of coffee and water, and gives us an accurate indication of the extraction percentage.
These are some small tools we use to ensure that your daily cups are right on the nose, tasting great, every time.
With Sam, we are hosting two workshops, one at our Prahan Market location on Monday, August 6, 2012 from 6:00 PM to 8:00 PM, and a second at our Therry St location on Monday, August 6, 2012 from 2:00 PM to 4:00 PM.
